Delicious ‘Warmth’ for the WPC

Last Christmas, our daughter bought us this beautiful casserole dish, and of course I had to try it out, even though the weather was really warm here in Florida. Some of you in colder climes might appreciate a plate of spicy hot chicken, onion, garlic and red pepper stew.

After the indulgence of the past couple of days, I’m not even thinking about food today, apart from looking at this photo. Well, maybe just a bit of fruit for lunch. πŸ™‚

    • Pretty much what I’ve told you. Fry seasoned skinless chicken breasts in olive oil for 5 minutes each side. Put in casserole dish. Fry chopped onions and crushed garlic; add a dessert spoon of flour, a few herbs, some cumin and then a pint of chicken or vegetable stock, and bring to boil, add red peppers for a couple of minutes, then put all this on top of the chicken and bake for 30 minutes on 375 F. I might have put in a few chopped carrots too. Sometimes I add a tin of chopped tomatoes instead of the peppers. I usually make recipes up, just using what I have. Hubby never complains. πŸ™‚

    Scheduled for us, later today, is Turkey curry. Unusually, Mister has told me in advance that he wants a small portion! He said this, after eating a huge Stilton cheese and bacon sandwich for lunch.
